Make demerara syrup

Demerara sugar brings a darker sugar flavour that often suits whisky, aged rum and coffee.

Step by step

  1. Weigh 100 g demerara sugar and 100 g water.
  2. Warm gently, stirring until dissolved.
  3. Cool and store in a clean labelled container in the fridge.
  4. Use as a 1:1 syrup starting point; adjust the drink if its darker flavour becomes too dominant.

Common mistake

A darker syrup changes flavour as well as sweetness. It will not turn every spirit into an aged-spirit substitute.

Try it

Try 5 ml in an Old Fashioned, keeping spirit and bitters identical to a simple-syrup version.
