Club soda118.3 mlLength, aroma or texture; add sparkling ingredients at serving.

Method

  1. Fill a highball or Collins glass two-thirds full with ice.
  2. Stir to chill the glass, then drain off any water.
  3. Pour the tea, St-Germain and whiskey into the glass and stir gently to combine.
  4. Pour soda water down the side of the glass so as to retain carbonation.
  5. Add ice and top with a final splash of soda water.
  6. Express the lemon peel, then discard.
  7. Garnish with fresh bay leaf.

Glass: Highball
Garnish: lemon peel, fresh bay leaf (or another fresh herb to complement the meal)
